The theme of the restaurant, “fermentation and cooking on the fire”, sounds a little unsettling, perhaps how you would spend your first day after the apocalypse. However, the cooking styles influenced by Scandinavians are simplistic and delicious. For example, hot tomatoes with cold yogurt and chilli urfa are exceptionally fresh and incredibly tasty. Tempura stems and herbs, which combine excellently with the summer spritz cocktail, with Sichuan pepper and elderflower vinegar are juicier and almost addictive.
